  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup sugar

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  • In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, ground cinnamon, and sugar. Stir well to blend the dry ingredients evenly.
  • In another bowl, whisk together the eggs, cottage cheese, applesauce, melted butter, and vanilla extract until smooth and well combined.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. Gently fold in the diced apples.
  • Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Serving

  • Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack. Serve warm or at room temperature.

Storage

  • Once cooled, store the muffins in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze for up to 3 months.
