  • 4 ears of fresh corn shucked
  • 2 ripe avocados diced
  • 1 pint cherry tomatoes halved
  • 1 small red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup lime juice
  • Salt and pepper to taste

  • 1/2 cup feta cheese crumbled
  • 1/2 cup black beans rinsed
  • 1/2 cup diced bell peppers
  • 1 jalapeño seeded and diced

Instructions
 

Preparation

  • Bring a large pot of water to a boil. Add the shucked corn and cook for 5-7 minutes until tender. Remove and let cool before slicing the kernels off the cob.
  • Dice the avocados and place them into a large mixing bowl. Ensure they are ripe and creamy for the best texture.
  • Add the cherry tomatoes, red onion, and cilantro to the bowl with the avocados. Gently mix to combine.
  • Once the corn has cooled, add the kernels to the mixing bowl. Stir everything together carefully to avoid mashing the avocados.
  • Drizzle the lime juice over the salad, and season with salt and pepper to taste. Mix gently to ensure even distribution of flavors.
  • For a refreshing taste, chill the salad in the refrigerator for at least 15 minutes before serving.
