Ingredients
  

Salad

  • 2 large English cucumbers sliced
  • 1 red bell pepper diced
  • 1/2 red onion thinly sliced

Smoky Dressing

  • 1/4 cup olive oil
  • 1 tsp smoked paprika
  • 2 tbsp lime juice
  • 1 tbsp honey
  • Salt and pepper to taste

Preparation

  • Slice the cucumbers into thick rounds. If using regular cucumbers, peel and deseed them first.
  • Place the cucumber slices on a preheated grill for about 2-3 minutes on each side until slightly charred.
  • In a mixing bowl, whisk together olive oil, smoked paprika, lime juice, honey, salt, and pepper until well combined.
  • In a large salad bowl, combine the grilled cucumber slices, diced red bell pepper, and thinly sliced red onion.
  • Pour the smoky dressing over the salad ingredients and toss gently to ensure everything is coated.
  • Allow the salad to rest for at least 10 minutes to let the flavors meld together.
  • Taste the salad and adjust seasoning if necessary, adding more salt or lime juice as preferred.
  • Serve the salad fresh as a side dish with your favorite BBQ meals.
  • Store any leftover salad in an airtight container in the refrigerator for up to 2 days.
