Creamy Filling

  • 8 oz cream cheese softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream

Cake Layers

  • 1 box graham crackers
  • 3 cups fresh blackberries

Preparation

  • In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract, mixing until well combined. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  • Line the bottom of a 9-inch round cake pan with a single layer of graham crackers. Spread a layer of the creamy filling over the crackers, followed by a layer of fresh blackberries. Repeat the layers until all ingredients are used, finishing with a layer of filling.
  • Cover the cake with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the layers to set.

Serving

  • Once chilled, remove the cake from the refrigerator, slice, and serve. Garnish with additional blackberries and a sprig of mint if desired.

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. For best results, consume within the first 2 days.
