Preparation

  • Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan.
  • In a medium bowl, combine the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  • Stir in the lemon juice and zest into the butter mixture until well combined.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk. Gently fold in fresh blackberries.
  • Pour the batter into the prepared pan and smooth the top. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Frosting and Serving

  • In a bowl, beat together softened butter and powdered sugar until smooth. Add lemon juice and a pinch of salt, beating until fluffy.
