Preparation

  • Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan to ensure easy removal after baking.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In another bowl, use an electric mixer to cream the softened butter and sugar until light and fluffy. This should take about 2 minutes.
  • Add eggs one at a time to the butter mixture, beating well after each addition. Mix in the vanilla extract and cottage cheese until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Carefully fold in the fresh blueberries.
  • Pour the batter into the prepared cake pan, spreading it evenly with a spatula.
  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the bake comes out clean.
  • Allow the bake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
