  • 2 cups all-purpose flour
  • 1 tsp baking powder

  • 2 large eggs room temperature

Lemon Cream

  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tbsp lemon zest
  • 1/4 cup lemon juice
  • 1 cup heavy cream

  • 2 cups fresh blueberries
  • 1 box vanilla cake mix prepared according to package instructions

Preparation

  • Bake the vanilla cake according to package instructions and allow to cool completely. Once cooled, cut the cake into 1-inch cubes and set aside.
  • In a large mixing bowl, beat the cream cheese with the powdered sugar and lemon zest until smooth. Gradually add lemon juice while continuing to beat until well combined. In a separate bowl, whip the heavy cream until soft peaks form, then gently fold into the cream cheese mixture.
  • In a trifle dish, start with a layer of cake cubes, followed by a layer of lemon cream, and then a layer of blueberries. Repeat this process until all ingredients are used, finishing with a layer of lemon cream on top.

Chilling

  • Cover the trifle with plastic wrap and refrigerate for at least 2 hours before serving to allow the flavors to meld.

Serving

  • Before serving, garnish the trifle with additional blueberries and a sprinkle of lemon zest for decoration. Serve chilled.

Storage

  • Cover any leftover trifle and store in the refrigerator for up to 3 days. The flavors will continue to develop, but the texture is best within the first day.
