Ingredients
  

Crust

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/4 cup granulated sugar
  • 1/4 tsp salt

Filling

  • 2 large eggs room temperature
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • 1 cup fresh blueberries

Preparation

  • Preheat the oven to 350°F. In a large mixing bowl, combine flour, sugar, and salt. Add the softened butter and mix until the mixture resembles coarse crumbs. Press the mixture into a greased 9-inch square baking dish. Bake for 15 minutes until lightly golden.
  • In another bowl, whisk together eggs, sugar, lemon juice, and lemon zest until smooth. Gently fold in the blueberries. Pour this mixture over the pre-baked crust, spreading it evenly.
  • Place the dish back in the oven and bake for an additional 35 minutes, or until the filling is set and the top is lightly golden. Allow the bars to cool completely before slicing.

Serving

  • Once cooled, slice the bars into 8 equal pieces. Serve chilled or at room temperature for a refreshing treat.
