Ingredients
  

Crust

  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour

Blueberry Filling

  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Streusel Topping

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter cold and cubed
  • 1/2 tsp ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). In a large mixing bowl, combine melted butter, sugar, and flour. Mix until crumbly. Press this mixture evenly into the bottom of a greased 9x13 inch baking pan.
  • In another bowl, toss the blueberries with sugar, lemon juice, and cornstarch until evenly coated. Spread the blueberry mixture over the crust.
  • Combine flour, brown sugar, and cinnamon in a bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Sprinkle evenly over the blueberry layer.

Baking

  • Place the baking pan in the preheated oven and bake for 50 minutes, or until the topping is golden brown and the blueberries are bubbly.

Cooling

  • Allow the bars to cool completely in the pan on a wire rack. Once cooled, cut into 8 slices.

Serving

  • Serve the bars at room temperature or slightly warm. Pair with a scoop of vanilla ice cream if desired.
