Equipment

  • 1 baking sheet
  • 1 small saucepan
  • 1 knife for cutting squash

Ingredients

Main Ingredients

  • 2 medium acorn squashes
  • 1/2 cup unsalted butter
  • 1/4 cup fresh sage leaves
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Optional Additions

  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon maple syrup
  • A sprinkle of crushed red pepper flakes

Instructions

Preparation

  • Preheat your oven to 400°F. Cut each acorn squash in half and remove the seeds. Place the halves cut side up on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  • In a small saucepan over medium heat, melt the butter. Add the sage leaves and cook until the butter turns brown and the sage is crispy, about 5-7 minutes. Remove from heat.
  • Roast the squash in the preheated oven for 40-50 minutes, until the flesh is tender and easily pierced with a fork.

Serving

  • Drizzle the brown butter sage sauce over the roasted squash halves. Optionally, add a sprinkle of Parmesan or maple syrup before serving.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
