Equipment

  • 1 skillet large
  • 1 mixing bowl medium
  • 1 rice cooker or pot for stove

Ingredients

Chicken and Sauce

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup buffalo sauce
  • 2 tbsp unsalted butter
  • 1 tsp garlic powder
  • Salt and pepper to taste

Rice

  • 2 cups cooked rice
  • 2 cups chicken broth optional, for cooking rice

Toppings

  • 1/2 cup diced celery
  • 1/2 cup diced carrots
  • 1/4 cup blue cheese crumbles optional

Instructions

Preparation

  • Slice the chicken breasts into bite-sized pieces and season with garlic powder, salt, and pepper. Heat a skillet over medium heat and add the chicken pieces.
  • Cook the chicken in the skillet for 7-10 minutes, stirring occasionally, until golden brown and cooked through. Remove from heat and toss with buffalo sauce and butter until well coated.

Rice and Assembly

  • Prepare the rice according to package instructions, using chicken broth instead of water for added flavor, if desired. Fluff with a fork when done.
  • In each serving bowl, place a generous scoop of rice as the base. Top with buffalo chicken and a variety of fresh toppings such as diced celery, carrots, and blue cheese crumbles.

Serving

  • Drizzle additional buffalo sauce over the top and serve immediately while warm. Pair with a cold beverage for a complete meal.

Storage and Reheating

  • Place any leftovers in an airtight container and store in the refrigerator for up to three days. Keep rice and toppings separate to maintain texture.
  • Reheat in a skillet over low heat with a splash of water to retain moisture. Alternatively, microwave in short intervals, stirring to ensure even heating.
