Preparation

  • Peel and slice the peaches into uniform wedges to ensure even cooking. Set aside.
  • Melt butter in a saucepan over medium heat, add brown sugar, and stir until melted and bubbling. Pour into the prepared pan.
  • Arrange the sliced peaches in a circular pattern on top of the caramel in the pan.
  • In a large bowl, whisk together the flour and baking powder. Set aside.
  • In another bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
  • Pour the batter over the peaches in the pan, spreading evenly to cover.
  • Bake in a preheated oven at 350°F for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

Serving

  • Cool the cake for 10 minutes, then invert onto a serving plate. Serve warm with ice cream or whipped cream if desired.
