Equipment

  • 1 medium saucepan for browning butter
  • 1 electric mixer
  • 1 mixing bowl large
  • 1 baking sheet lined with parchment paper
  • 1 Cookie scoop

Ingredients

Dry Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup unsalted butter browned and cooled
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 cup sourdough discard

Add-ins

  • 2 cups semi-sweet chocolate chips

Instructions

Preparation

  • In a medium saucepan over medium heat, cook butter until it foams and turns a deep golden color. Stir continuously to prevent burning. Remove from heat and let cool.
  • In a large mixing bowl, combine the cooled brown butter, brown sugar, and granulated sugar. Beat until well mixed, then add vanilla extract and sourdough discard. Mix until smooth.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture, mixing just until combined.
  • Fold in the chocolate chips until evenly distributed throughout the dough.
  • Cover the dough and refrigerate for at least 30 minutes to allow the flavors to meld and the dough to firm up.

Serving

  • Preheat oven to 350°F (175°C). Use a cookie scoop to drop dough onto prepared baking sheet, spacing them 2 inches apart. Bake for 10-12 minutes, or until edges are golden. Allow to cool slightly before transferring to a wire rack.
  • Serve the cookies warm for a gooey center or let them cool completely for a firmer texture.

Storage

  • Store cooled cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
