  • 2 boneless skinless chicken breasts
  • 8 oz burrata cheese
  • 2 cups cherry tomatoes halved
  • 4 cups arugula
  • 2 tbsp balsamic glaze

Optional Add-ins

  • 1/4 cup toasted pine nuts
  • 1 avocado sliced
  • 1/4 cup fresh basil leaves

Instructions
 

Preparation

  • Season the chicken breasts with salt and pepper. Heat a grill pan over medium-high heat and grill the chicken for about 6-7 minutes per side until cooked through.
  • Remove the chicken from the pan and let it rest for 5 minutes. Slice the chicken into thin strips.
  • While the chicken rests, halve the cherry tomatoes and tear the burrata into smaller pieces. Rinse and dry the arugula.

Assembly

  • In a large bowl, combine arugula, cherry tomatoes, and sliced chicken. Add the torn burrata pieces on top.
  • Drizzle the salad with balsamic glaze. Toss gently to combine all ingredients.

Serving

  • Transfer the salad to serving plates or bowls. Optionally, add toasted pine nuts and fresh basil for extra flavor.

Storage

  • Store any leftover salad in an airtight container in the refrigerator for up to 2 days. Burrata may become less creamy after refrigeration.
