  • 2 boneless skinless chicken breasts
  • 3 ears of fresh corn
  • 4 cups mixed salad greens

Lime Dressing

  • 1/4 cup fresh lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a bowl, combine lime juice, olive oil, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes.
  • Remove husks from corn and grill over medium-high heat until charred on all sides, about 10 minutes. Let cool and cut kernels off the cob.
  • Preheat the grill to medium-high. Remove chicken from marinade and grill for 6-7 minutes on each side until cooked through. Let rest before slicing.
  • Whisk together lime juice, olive oil, honey, and a pinch of salt and pepper in a small bowl.
  • In a large bowl, combine grilled chicken slices, corn kernels, and mixed greens. Drizzle with lime dressing and toss to combine.
  • Divide the salad into bowls and garnish with fresh herbs if desired. Serve immediately.
  • Store any leftovers in an airtight container in the refrigerator for up to 2 days. Dressing should be stored separately.
