  • 1 lb chicken breast thinly sliced
  • 2 medium zucchinis spiralized or thinly sliced
  • 8 oz fettuccine pasta

Alfredo Sauce

  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • Thinly slice the chicken breasts and season them with salt and pepper. Spiralize or slice the zucchinis and set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add the zucchini and sauté for 3-4 minutes until tender-crisp. Remove and set aside.
  • Reduce heat to medium, add garlic to the skillet, and sauté for 1 minute. Pour in the heavy cream, bring to a simmer, and add Parmesan cheese. Stir until the sauce thickens.
  • Return the chicken and zucchini to the skillet, toss them in the Alfredo sauce, and cook pasta according to package instructions. Drain and add to the skillet, mixing well.

Serving

  • Serve the pasta hot, garnished with additional Parmesan cheese and fresh parsley if desired.

Storage

  • Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of cream to loosen the sauce if necessary.
