Ingredients
  

Marinade

  • 2 tbsp chipotle peppers in adobo sauce chopped
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Chicken

  • 4 boneless skinless chicken breasts

Peach Salsa

  • 2 ripe peaches diced
  • 1/4 cup red onion diced
  • 1/4 cup cilantro chopped
  • 1 tbsp lime juice
  • Salt to taste

Instructions
 

Preparation

  • In a medium bowl, mix together the chipotle peppers, lime juice, olive oil, garlic powder, cumin, salt, and pepper. Whisk until well combined.
  • Place the chicken breasts in a large resealable bag or container. Pour the marinade over the chicken, ensuring each piece is well coated. Seal and refrigerate for at least 30 minutes.

Cooking

  • Preheat your grill to medium heat, approximately 350°F.
  • Remove the chicken from the marinade and place it on the grill. Cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F.
  • While the chicken is grilling, prepare the peach salsa. In a bowl, combine the diced peaches, red onion, cilantro, lime juice, and salt. Mix gently.
  • Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.

Serving

  • Slice the rested chicken and serve topped with a generous scoop of peach salsa. Enjoy immediately.
