Preparation

  • Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish and set aside.
  • In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is translucent. Drain any excess fat.
  • Add the frozen mixed vegetables to the skillet, along with the garlic powder, salt, and black pepper. Stir to combine and cook for an additional 5 minutes.
  • Transfer the beef and vegetable mixture to the prepared baking dish. Spread the mashed potatoes evenly over the top.
  • Place the casserole in the preheated oven and bake for 30 minutes. Remove from the oven and sprinkle with shredded cheddar cheese.
  • Return the casserole to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Allow the casserole to cool for 5 minutes before serving, letting the flavors meld together.
  • Serve hot with a side salad or crusty bread for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven before serving.
