  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced
  • Salt and pepper to taste

Preparation

  • Cut the avocados in half and remove the pits. Dice the avocado flesh into bite-sized pieces and place in a medium mixing bowl.
  • Add halved cherry tomatoes, chopped red onion, and cilantro to the bowl with the avocados.
  • Squeeze fresh lime juice over the mixture, and season with salt and pepper. Gently toss all ingredients together until well combined.
  • Transfer the avocado salad to a serving dish and enjoy immediately for the best flavor and texture.
  • If not serving immediately, cover tightly with plastic wrap, pressing the wrap directly onto the surface of the salad to prevent browning. Store in the refrigerator for up to 1 day.
