  • 2 cups cooked chicken breast shredded or diced
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

  • 1/4 cup chopped cilantro
  • 1 tablespoon chopped jalapenos
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped cucumbers

Preparation

  • Cook chicken breast until done and shred or dice it into bite-sized pieces. If using pre-cooked chicken, ensure it is cut to your desired size.
  • Cut avocados into halves, remove the pits, and scoop out the flesh. Dice the avocado into bite-sized pieces.
  • Halve the cherry tomatoes and finely chop the red onion. If using other optional vegetables, prepare them as desired.
  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper until well combined.
  • In a large mixing bowl, combine chicken, avocados, tomatoes, and red onion. Pour the dressing over the salad.
  • Gently toss all the ingredients to combine, ensuring the dressing coats everything evenly. Be careful not to mash the avocados.
  • Serve the salad immediately for the best flavor. You can serve it on its own or over a bed of greens.
  • If desired, add any optional ingredients such as cilantro, jalapenos, feta cheese, or cucumbers at this time and gently mix.
  • Store any leftover salad in an airtight container in the refrigerator for up to 2 days. For best results, place plastic wrap directly on the surface of the salad to minimize browning of the avocados.
