Ingredients
  

Pasta Salad

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion thinly sliced
  • 1/2 cup bell peppers diced
  • 1/2 cup mozzarella balls
  • 1/4 cup sliced black olives

Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice

Preparation

  • Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  • While the pasta is cooking, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and bell peppers, and thinly slice the red onion.

Mixing the Salad

  • In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, bell peppers, mozzarella balls, and black olives.
  • In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, and Italian seasoning. Season with salt and pepper to taste.
  • Pour the dressing over the salad ingredients. Toss gently to ensure all ingredients are evenly coated with the dressing.
