  • 1 1/2 cups orzo pasta
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 red bell pepper diced
  • 1/2 red onion finely chopped
  • 3/4 cup Kalamata olives pitted and halved
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Dressing Ingredients

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil. Add the orzo and cook for 8-10 minutes, stirring occasionally, until al dente. Drain and rinse with cold water to stop cooking.
  • While the orzo cooks, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. Pit and halve the olives and crumble the feta cheese.
  • In a large bowl, combine the cooked orzo, tomatoes, cucumber, bell pepper, onion, olives, feta, and parsley. Toss gently to mix.
  • In a small bowl, whisk together olive oil, red wine vinegar, and oregano. Season with salt and pepper to taste.
  • Pour the dressing over the salad. Toss to coat all the ingredients evenly.
  • Cover the salad and chill in the refrigerator for at least 1 hour before serving to allow the flavors to meld.

Serving

  • Once chilled, toss the salad again before serving. Adjust seasoning if necessary.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
