Equipment

  • 1 large pot for boiling pasta
  • 1 grill for grilling corn
  • 1 large mixing bowl

Ingredients

Salad

  • 3 cups cooked pasta such as rotini or farfalle
  • 4 ears fresh corn grilled and kernels removed
  • 1/2 cup red onion finely chopped
  • 2 jalapeños seeded and diced
  • 1/4 cup fresh cilantro chopped

Dressing

  • 1/2 cup mayonnaise
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1 clove garlic minced

Instructions

Preparation

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water, then set aside to cool completely.
  • Preheat your grill to medium-high heat. Place the corn directly on the grates and grill for about 10 minutes, turning occasionally, until the kernels are charred and tender. Remove and let cool before cutting the kernels off the cob.

Serving

  • In a large mixing bowl, combine the cooled pasta, grilled corn kernels, red onion, jalapeños, and cilantro. In a separate bowl, whisk together the mayonnaise, lime juice, chili powder, and garlic until smooth. Pour the dressing over the pasta mixture and toss gently to coat.
  • Transfer the salad to a serving bowl and garnish with additional cilantro leaves and lime wedges. Serve immediately or cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Storage

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Stir well before serving to redistribute the dressing.
