Ingredients

  • 4 cups sliced cucumbers
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley

Dressing Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup BBQ sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Instructions
 

Preparation

  • Wash and thinly slice the cucumbers, either with a knife or a mandoline for even slices.
  • In a large mixing bowl, whisk together the mayonnaise, BBQ sauce, apple cider vinegar, and honey until smooth. Season with salt and pepper to taste.
  • Add the sliced cucumbers and chopped fresh herbs to the bowl. Toss everything gently to coat the cucumbers evenly with the dressing.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Serving

  • Transfer the chilled salad to a serving platter or bowl. Garnish with additional fresh herbs if desired and serve cold.
