Preparation

  • In a medium mixing bowl, combine the Greek yogurt and honey. Stir until the mixture is smooth and well-blended. Adjust sweetness to taste if needed.
  • Line a baking sheet with parchment paper. This prevents sticking and makes it easier to remove the bark once frozen.
  • Pour the yogurt mixture onto the prepared baking sheet. Use a spatula to spread it evenly to about 1/4-inch thickness.
  • Evenly distribute the fresh blackberries over the yogurt. Gently press them into the mixture to ensure they stick.
  • Sprinkle sliced almonds and shredded coconut over the top, if desired, to add extra flavor and texture.
  • Place the baking sheet in the freezer. Allow the yogurt bark to freeze for at least 4 hours or until completely solid.

Serving

  • Once frozen, remove the bark from the freezer. Break it into pieces of desired size. Serve immediately for a refreshing treat.

  • Store any leftover bark pieces in an airtight container in the freezer. They will keep for up to two weeks.
