  • In another bowl, beat the eggs and cottage cheese together using an electric mixer until smooth. Add the vanilla extract and lemon zest if using.
  • Gently fold the blueberries into the wet mixture, ensuring they are evenly distributed.
  • Slowly add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  • Pour the batter into the prepared cake pan, spreading it evenly with a spatula.
  • Place the pan in the oven and bake for 45 to 50 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
