Salad

  • 3 pounds Yukon Gold potatoes peeled and diced
  • 1 cup dill pickles chopped

  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp fresh dill chopped
  • 1 tbsp pickle juice
  • 1 tsp salt

Preparation

  • Start by placing the diced potatoes in a large pot. Fill the pot with water to cover the potatoes by about 1 inch. Add a pinch of salt and bring to a boil over medium-high heat. Reduce the heat to medium and let them simmer until the potatoes are tender, about 10 minutes. Drain the potatoes and let them cool slightly.
  • In a large mixing bowl, combine mayonnaise, sour cream, fresh dill, pickle juice, salt, and black pepper. Mix well until all ingredients are incorporated, forming a creamy dressing.
