  • 8 oz fettuccine pasta
  • 1 lb large shrimp peeled and deveined
  • 2 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 lemon zested and juiced

  • 2 tbsp chopped parsley
  • 1/4 cup grated Parmesan cheese

Instructions
 

Preparation

  • Peel and devein the shrimp. Rinse under cold water and pat dry with paper towels. Season with salt and pepper.
  • In a large pot, bring water to a boil. Add a pinch of salt and the fettuccine pasta. Cook according to package instructions until al dente. Drain and set aside.

Cooking

  • In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the shrimp and cook until pink and opaque, about 3 minutes per side. Remove shrimp from the skillet and set aside.
  • In the same skillet, melt the remaining butter. Add minced garlic and sauté until fragrant, about 1 minute. Pour in the heavy cream and lemon zest. Stir and let it simmer for 5 minutes until slightly thickened.

Combining

  • Add the cooked pasta and shrimp back into the skillet. Toss to combine with the sauce. Add lemon juice and season with salt and pepper to taste.
  • Sprinkle with Parmesan cheese and chopped parsley. Toss to coat evenly and serve hot.

Serving

  • Divide the pasta among serving plates. Garnish with additional parsley and Parmesan if desired. Serve immediately.
