  • 2 cups penne pasta
  • 1 pound chicken breast diced
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/4 cup sun-dried tomatoes sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Preparation

  • Season the diced chicken breast with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  • In a large pot, bring salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain the pasta and reserve 1/2 cup of pasta water.
  • In the same skillet used for the chicken, add minced garlic and sauté for about 30 seconds until fragrant. Add cherry tomatoes, olives, and sun-dried tomatoes, and cook for an additional 2 minutes.
  • Stir in heavy cream and Parmesan cheese, allowing the sauce to thicken. Return the chicken and pasta to the skillet, tossing everything together. If the sauce is too thick, add reserved pasta water until desired consistency is reached.

Serving

  • Garnish with fresh basil and serve warm. Enjoy this creamy and flavorful Mediterranean dish with your favorite side.

  • Transfer leftover pasta into an airtight container and store in the refrigerator for up to 3 days. The flavors often meld and become even more delicious after a day or two.
