Base

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter melted

Cream Filling

  • 8 oz cream cheese softened
  • 1 cup confectioners' sugar
  • 2 cups heavy whipping cream

Peach Layer

  • 4 cups sliced peaches fresh or canned

Preparation

  • In a mixing bowl, combine crushed graham crackers with melted butter. Mix until the crumbs are well coated. Press the mixture evenly into the bottom of a 9x13 inch baking dish to form a firm base.

Cream Filling

  • In a large mixing bowl, beat the cream cheese until smooth. Gradually add the confectioners' sugar, continuing to beat until well incorporated. Slowly pour in the heavy whipping cream while mixing on low speed. Increase speed to medium-high and beat until stiff peaks form.

Assemble the Cake

  • Spread half of the cream filling over the graham cracker base. Arrange a layer of sliced peaches on top of the cream. Repeat the layers with the remaining cream filling and peaches, finishing with a cream layer on top.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight. This allows the flavors to meld and the cake to set properly.

Serving

  • Once chilled, slice the Peach Icebox Cake into squares and serve chilled. Garnish with additional peach slices or a sprinkle of cinnamon if desired.
