Equipment

  • 1 air fryer
  • 1 mixing bowl large
  • 1 baking sheet lined with parchment paper

Ingredients

Main Ingredients

  • 2 cups instant polenta
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups water
  • 1 tsp salt
  • 1/2 tsp black pepper

Optional Ingredients

  • 1 tsp paprika
  • 1 tsp dried rosemary

Instructions

Preparation

  • In a large mixing bowl, combine water and salt, and bring to a boil. Gradually whisk in the polenta, stirring continuously until thickened.
  • Once the polenta is cooked, remove from heat and stir in shredded cheddar and Parmesan cheese until fully melted and incorporated.
  • Spread the polenta mixture onto a lined baking sheet, smoothing it into an even layer. Refrigerate for at least 1 hour or until firm.
  • Once set, cut the polenta into fry-shaped strips using a sharp knife.
  • Preheat your air fryer to 400°F. Lightly spray the basket with cooking oil.
  • Place the polenta fries in the air fryer basket in a single layer. Cook for about 20 minutes, flipping halfway through, until golden and crispy.

Serving

  • Serve the cheesy polenta fries immediately with your choice of dipping sauce.

Storage

  • Store any leftover fries in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for 5 minutes before serving.

Notes

Pro Tips: Ensure the polenta is fully cooled before cutting to maintain shape. Use freshly grated cheese for the best flavor and melting properties.
Ingredient Substitutions: Swap cheddar for mozzarella or add a sprinkle of cayenne for heat.
How to Serve: Perfect as a snack or side dish with your favorite dipping sauces.
Storage & Freshness: Keep leftovers in the fridge and reheat in the air fryer to regain crispiness.
Make-Ahead Tips: Prepare the polenta in advance, chill, and cut, then air fry when ready to serve.
