Equipment

  • 1 non-stick skillet
  • 1 mixing bowl
  • 1 whisk

Ingredients

Main Ingredients

  • 4 whole wheat tortillas
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup canned black beans rinsed and drained
  • 1 cup fresh spinach leaves

Optional Add-ins

  • 1 avocado sliced
  • 1/2 cup diced tomatoes
  • 1/2 cup chopped bell peppers
  • 1/4 cup pico de gallo

Instructions

Preparation

  • Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined. Grate the cheese, rinse and dry the spinach, and rinse the black beans under cold water.
  • Lay out the tortillas and have add-ins ready for easy assembly. This ensures a smooth cooking process.

Cooking

  • Heat a non-stick skillet over medium heat. Add a small amount of oil or butter and pour in the beaten eggs. Stir occasionally until scrambled to your liking, then remove from the pan.
  • Place a tortilla in the pan, sprinkle half with cheese, and layer with scrambled eggs, black beans, spinach, and optional add-ins. Fold in half.
  • Cook each side until golden brown and crispy. Ensure the cheese melts thoroughly before removing from heat.

Serving

  • Cut into slices and serve immediately with your favorite salsa or hot sauce.

Storage

  • Allow the quesadillas to cool completely before storing in an airtight container in the refrigerator for up to 3 days.

Notes

Pro Tips: Use a heavy-bottomed skillet for even cooking. Avoid overfilling to make flipping easier. Cook over medium-low heat for extra crispiness.
Ingredient Substitutions: Use any cheese you like or replace black beans with pinto beans. For a spicier version, add jalapeños.
How to Serve: Serve with fresh salsa or guacamole on the side. Pair with a fruit salad for a balanced meal.
Storage & Freshness: Store leftovers in an airtight container for up to 3 days. Reheat in a skillet for best results.
Make-Ahead Tips: Prepare ingredients the night before for quicker assembly in the morning.
