Ingredients

  • 4 large russet potatoes peeled and sliced
  • 1 cup heavy cream
  • 1 cup grated cheddar cheese
  • 1/2 cup chicken broth
  • 1/4 cup unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
Optional Add-ins
  • 1/2 cup cooked bacon bits
  • 2 tablespoons sliced green onions
  • 1/8 teaspoon ground nutmeg

Method
 

Preparation
  1. Peel and slice the potatoes into 1/4-inch thick rounds. Rinse under cold water and pat dry.
  2. Lightly grease the inside of the crock pot with butter or non-stick spray.
Cooking
  1. Layer the potatoes in the crock pot, seasoning each layer with garlic powder, onion powder, salt, and pepper. Pour a portion of the cream mixture over each layer and add cheese.
  2. Set the crock pot to low and cook for 6 to 7 hours. Alternatively, cook on high for 3 to 4 hours.
Serving
  1. Once cooked, transfer the potatoes to a serving dish and garnish with fresh herbs if desired. Serve warm.

  1. Allow the potatoes to cool completely before placing them in an airtight container. Refrigerate for up to 3 days.
