  • 1 cup long-grain white rice
  • 1 pound sausage such as chorizo or andouille, sliced
  • 1 can 14.5 ounces diced tomatoes with juice
  • 1 bell pepper diced
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Preparation

  • Rinse the rice under cold water until the water runs clear. Dice the onion, bell pepper, and garlic. Slice the sausage into bite-sized pieces.

Cooking

  • Set your air fryer to 350°F to preheat while you prepare the ingredients.
  • In a large bowl, combine the rice, sausage, diced tomatoes with juice, bell pepper, onion, garlic, cumin, smoked paprika, salt, and pepper. Mix until well combined.
  • Transfer the mixture to the air fryer basket and spread evenly. Cook for 25-30 minutes, stirring halfway through.

Serving

  • Remove from the air fryer and let sit for a few minutes. Garnish with chopped cilantro and a wedge of lime before serving.
