Equipment

  • 1 9x13 inch baking dish greased
  • 1 mixing bowl large
  • 1 whisk

Ingredients

Main Ingredients

  • 8 large eggs
  • 2 cups milk
  • 3 cups shredded hashbrowns thawed
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 tsp salt
  • 1/2 tsp black pepper

Optional Add-ins

  • 1 cup cooked sausage or bacon chopped
  • 1/2 cup sliced mushrooms
  • 1/2 cup chopped spinach

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish and set aside.
  • Thaw the hashbrowns if frozen and pat them dry to remove excess moisture. Spread the hashbrowns evenly in the prepared baking dish.
  • In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the shredded cheddar cheese, diced bell peppers, and onions.
  • Pour the egg mixture over the hashbrowns in the baking dish. Ensure the mixture is evenly distributed. Add any optional add-ins like sausage, mushrooms, or spinach if desired.

Baking

  • Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the eggs are set and the top is golden brown.
  • Insert a toothpick into the center of the casserole. If it comes out clean, the casserole is done. If not, continue baking for a few more minutes.

Serving

  • Remove the casserole from the oven and allow it to cool for a few minutes before slicing into 8 pieces. Serve warm with your choice of side dishes.

Storage

  • Store any leftover casserole in an airtight container in the refrigerator for up to 3 days. Reheat servings in the microwave or oven before enjoying.
