Ingredients

Egg Mixture

  • 8 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Filling

  • 1 cup diced turkey sausage
  • 2 cups fresh spinach chopped
  • 1 tablespoon olive oil

Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin with olive oil to prevent sticking.
  • In a skillet over medium heat, cook the diced turkey sausage until browned. Add the chopped spinach and cook until wilted. Set aside to cool slightly.
  • In a large mixing bowl, whisk together eggs, milk, cheddar cheese, salt, and pepper until well combined.

  • Bake in the preheated oven for 25-30 minutes, or until the egg muffins are set and the tops are golden brown. A toothpick inserted into the center should come out clean.

Serving

  • Allow muffins to cool for a few minutes before serving. They can be enjoyed warm or at room temperature.
