Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  • In a large mixing bowl, whisk together the flour, baking powder, and salt until combined.
  • In another bowl, use an electric mixer to cream the butter and granulated sugar until light and fluffy, about 3–4 minutes.
  • Add the eggs one at a time to the butter mixture, beating well after each addition. Then add the vanilla extract and mix until incorporated.
  • Gradually add the dry ingredients and milk to the wet ingredients, mixing until just combined.
  • Pour the batter into the prepared baking sheet. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Frosting and Decoration

  • Chill a mixing bowl and beaters in the freezer for 10 minutes. Whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Once the cake has cooled, spread the whipped cream frosting evenly over the top. Arrange blueberries in the top left corner to form a square, and use sliced strawberries to create stripes.
