Ingredients
  

Salad

  • 4 cups fresh broccoli florets
  • 1/2 cup sunflower seeds
  • 1/4 cup red onion finely chopped
  • 1/2 cup shredded carrots
  • 1/3 cup dried cranberries
  • 1/4 cup sliced almonds

Dressing

  • 1/2 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Preparation

  • Wash and cut the broccoli into bite-sized florets. Blanch for 1-2 minutes, then transfer to an ice bath.
  • In a large bowl, combine broccoli, sunflower seeds, red onion, carrots, cranberries, and almonds.
  • In a separate bowl, whisk together Greek yogurt, apple cider vinegar, honey, salt, and pepper.
  • Pour the dressing over the salad, toss to coat evenly.
