  • 8 oz whole wheat rotini pasta
  • 1 cup chopped dill pickles
  • 1/2 cup Greek yogurt
  • 2 tbsp pickle juice
  • 1/4 cup chopped fresh dill
  • 1/4 cup diced red onion

Optional Add-ins

  • 1 cup cherry tomatoes halved
  • 1 cup grilled chicken sliced
  • 1 avocado diced
  • 1/2 cup shredded cheddar cheese

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
  • In a large mixing bowl, whisk together Greek yogurt, pickle juice, and fresh dill until well combined. Season with salt and pepper to taste.
  • Add the cooked pasta, chopped dill pickles, and diced red onion to the dressing. Toss until the pasta is evenly coated with the dressing.
  • If using, gently fold in the cherry tomatoes, grilled chicken, avocado, and cheddar cheese.

Serving

  • Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld. Serve chilled, garnished with extra dill if desired.

  • Store leftover salad in an airtight container in the refrigerator for up to 3 days. Stir before serving to redistribute the dressing.
