Equipment

  • 1 9x13 inch baking pan greased
  • 1 saucepan
  • 1 mixing bowl medium
  • 1 whisk

Ingredients

Base Layer

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar

Jelly Layer

  • 2 cups fresh strawberries hulled and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup lemon juice freshly squeezed
  • 2 packets unflavored gelatin

Instructions

Preparation

  • Preheat the oven to 350°F. In a medium mixing bowl, combine flour, melted butter, and sugar. Mix until the ingredients are well combined and form a crumbly texture. Press the mixture evenly into a greased 9x13-inch baking pan.
  • Bake the base in the preheated oven for 15 minutes or until lightly golden. Remove from the oven and let it cool completely before adding the jelly layer.
  • In a saucepan over medium heat, combine strawberries and sugar. Cook until the strawberries release their juices and the mixture begins to thicken. Stir in lemon juice and gelatin until fully dissolved.
  • Carefully pour the strawberry lemon mixture over the cooled base, spreading evenly. Refrigerate the bars for at least 2 hours, or until the jelly is fully set.

Serving

  • Once the jelly is set, cut the bars into slices. Serve chilled with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.

Storage

  • Store any leftover bars in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the bars for up to one month.

Notes

Pro Tips: Use ripe strawberries for the best flavor. Chill the bars overnight for a firmer set. Taste the jelly mixture before setting to adjust sweetness. Add a scoop of vanilla ice cream for an indulgent treat. Storage & Freshness: Keep refrigerated in an airtight container. Freeze for up to one month. Make-Ahead Tips: Prepare the base a day in advance to save time. Allow the jelly to set overnight for best results.
