  • 2 pounds small potatoes halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley chopped

Preparation

  • Preheat your oven to 400°F.
  • Wash and dry the potatoes. Cut them into halves or quarters for even cooking.
  • In a large mixing bowl, toss the potatoes with olive oil, salt, and pepper until well coated.
  • Arrange the potatoes on a baking sheet lined with parchment paper. Roast in the oven for 30 minutes, stirring halfway through.
  • In a small saucepan, melt the butter over low heat. Add minced garlic and cook until fragrant, about 1-2 minutes. Set aside.
  • Remove potatoes from the oven. Drizzle with garlic butter and sprinkle parmesan cheese on top. Return to the oven for 5-7 minutes until cheese is melted.
