Equipment

  • 1 mixing bowl large
  • 1 baking sheet lined with parchment paper
  • 1 large pot

Ingredients

Bagel Dough

  • 2 cups all-purpose flour
  • 1 cup cottage cheese
  • 1 tbsp honey
  • 1 packet active dry yeast
  • 1/4 cup warm water
  • 1 tsp salt
  • 1 egg beaten

Optional Toppings

  • Sesame seeds
  • Poppy seeds

Instructions

Preparation

  • In a small bowl, combine warm water and honey. Sprinkle yeast over the top and let it sit for about 5 minutes until foamy.
  • In a large mixing bowl, combine the yeast mixture with cottage cheese, flour, and salt. Stir until a dough forms, then knead on a floured surface for about 10 minutes until smooth.
  • Place the dough in a lightly greased bowl, cover, and let rise in a warm place until doubled in size, about 1 hour.
  • Divide the dough into 8 pieces. Shape each piece into a ball, then use your finger to poke a hole through the center and gently stretch into a bagel shape.
  • Bring a large pot of water to a boil. Drop each bagel into the boiling water for 1 minute on each side. Remove and place on a baking sheet lined with parchment paper.
  • Preheat your oven to 375°F. Brush each bagel with beaten egg and sprinkle with optional toppings. Bake for 20-25 minutes or until golden brown.

Serving

  • Allow the bagels to cool slightly before serving. Enjoy fresh or with your favorite spreads and toppings.

Storage

  • Store in an airtight container for up to 3 days. For longer storage, freeze bagels and toast them before serving.

Notes

Pro Tips: Use bread flour for a chewier texture. Ensure yeast is active by seeing it foam. Experiment with seeds for toppings. Add whole wheat flour for a nutty taste.
Ingredient Substitutions: Use Greek yogurt instead of cottage cheese for a different texture. Replace honey with maple syrup for a vegan option.
How to Serve: Best served fresh, with cream cheese or avocado spread.
Storage & Freshness: Keep in an airtight container for freshness. Freeze for extended storage.
Make-Ahead Tips: Prepare dough the night before and let it rise overnight in the fridge.
