Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder

Wet Ingredients

  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 cup whole milk

Caramel and Peaches

  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 3-4 fresh peaches peeled and sliced

Instructions
 

Preparation

  • Melt 1/4 cup of butter in a saucepan over medium heat. Stir in the brown sugar until dissolved. Pour into the bottom of a greased 9-inch round cake pan, then arrange the peach slices over the caramel.
  • In a large mixing bowl, cream together 1/2 cup softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with milk, mixing until just combined.
  • Pour the batter over the peaches in the prepared pan. Smooth the top and bake in a preheated oven at 350°F for 50 minutes, or until a toothpick inserted into the center comes out clean.

Serving

  • Let the cake cool in the pan for 10 minutes before running a knife around the edges. Place a serving plate over the pan and carefully invert the cake onto the plate.
  • Slice the cake and serve warm, optionally with a scoop of vanilla ice cream or whipped cream.
