Ingredients
  

Pasta Salad

  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion thinly sliced
  • 1/2 cup Kalamata olives pitted and sliced
  • 1 cup feta cheese crumbled

Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

Preparation

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water to cool.
  • While the pasta cooks, chop the cherry tomatoes, cucumber, and red onion. Slice the Kalamata olives and crumble the feta cheese.

Make the Dressing

  • In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, and dried oregano. Season with salt and pepper to taste.

Assemble the Salad

  • In a large mixing bowl, combine the cooled pasta with the chopped vegetables and olives. Pour the dressing over the salad and toss to coat.
  • Gently fold in the crumbled feta cheese, mixing just enough to incorporate without breaking the cheese too much.
  • Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld. Serve chilled or at room temperature.
