Ingredients

Main Ingredients

  • 2 cups cooked chicken breast shredded
  • 1 cup plain Greek yogurt
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 2 tbsp lemon juice
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • Salt and pepper to taste

Optional Add-ins

  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • 1/2 cup diced apples

Instructions

Preparation

  • Cook the chicken breasts by grilling, baking, or poaching until fully cooked. Allow them to cool before shredding or dicing.
  • Dice the celery and red onion. Chop the fresh dill and parsley. Measure out the Greek yogurt and lemon juice.
  • In a large mixing bowl, combine the shredded chicken, Greek yogurt, lemon juice, dill, parsley, celery, and red onion. Mix thoroughly until well combined.
  • Taste the salad and add salt and pepper as needed. Adjust the amount of Greek yogurt if you prefer a creamier consistency.

Serving

  • For best flavor, refrigerate the salad for at least an hour before serving. This allows the flavors to meld together.
  • Serve the salad as a sandwich filling, on a bed of greens, or with whole-grain crackers for a healthy and satisfying meal.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to three days. Stir well before serving again.
