  • 2 cups cooked white beans
  • 2 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup toasted sunflower seeds

Green Goddess Dressing

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup fresh parsley leaves
  • 2 tbsp chopped fresh chives
  • 1 tbsp fresh tarragon leaves
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions
 

Preparation

  • Rinse and drain canned beans or cook dried beans until tender. Set aside to cool.
  • Combine mayonnaise, sour cream, parsley, chives, tarragon, lemon juice, garlic, salt, and pepper in a blender. Blend until smooth.
  • In a large mixing bowl, combine white beans, mixed greens, cherry tomatoes, cucumber, and red onion.
  • Pour the prepared dressing over the salad ingredients and toss gently to coat.
  • Sprinkle toasted sunflower seeds over the top of the salad before serving.

Serving

  • Transfer the salad to a serving platter and enjoy immediately for best freshness.
