  • 1 mixing bowl large
  • 1 serving platter

Ingredients

Salad Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 4 cups baby arugula
  • 1 cup cherry tomatoes halved
  • 8 oz burrata cheese
  • 1/4 cup fresh basil leaves

For Drizzling

  • 1/4 cup balsamic glaze

Instructions

Preparation

  • Brush the chicken breasts with olive oil and season with salt and pepper. Preheat the grill to medium-high heat and grill the chicken for about 6-7 minutes on each side until fully cooked.
  • In a large bowl, combine baby arugula, cherry tomatoes, and fresh basil leaves. Set aside.
  • Once the chicken is grilled, allow it to rest for a few minutes before slicing it into strips.

Serving

  • Add the sliced chicken to the salad bowl. Tear the burrata cheese into pieces and distribute over the salad. Drizzle with balsamic glaze before serving.

Storage

  • If there are leftovers, transfer the salad to an airtight container and store in the refrigerator for up to 2 days. Avoid adding the balsamic glaze until ready to serve to prevent the salad from becoming soggy.
