Ingredients
  

For the Chicken

  • 4 boneless skinless chicken breasts

  • 2 cloves garlic minced

For the Peach Bruschetta

  • 3 ripe peaches diced
  • 1/4 cup fresh basil chopped
  • 1 tbsp balsamic vinegar
  • 1 clove garlic minced
  • 1 baguette sliced and toasted

Preparation

  • In a mixing bowl, combine olive oil, garlic, balsamic vinegar, salt, and pepper. Add the chicken breasts and coat them thoroughly. Let them marinate for at least 30 minutes.
  • Prepare your grill by preheating it to medium-high heat. This ensures that the chicken will cook evenly and achieve a nice char.
  • Place the marinated chicken breasts on the grill. Cook for 6-7 minutes on each side or until the internal temperature reaches 165°F. Remove from the grill and let them rest for a few minutes.

Making the Bruschetta

  • In a separate bowl, mix diced peaches, chopped basil, balsamic vinegar, and minced garlic. Stir gently to combine all the ingredients.
  • Slice the baguette and place the slices on the grill. Toast them until they are golden brown and crispy.
  • Top each toasted baguette slice with a spoonful of the peach mixture. Arrange the bruschetta on a serving platter.

Serving

  • Slice the grilled chicken breasts and arrange them alongside the peach bruschetta. Garnish with additional basil if desired.
