Ingredients
  

Chimichurri Sauce

  • 1 cup fresh parsley finely chopped
  • 4 cloves garlic minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tsp red pepper flakes
  • Salt and pepper to taste

Chicken

  • 2 lbs boneless chicken thighs
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a blender, combine parsley, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Blend until smooth. Set aside half of the sauce for serving.
  • Place the chicken thighs in a mixing bowl. Pour the remaining chimichurri sauce over the chicken, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes to marinate.

Grilling

  • Heat the grill to medium-high. Ensure the grates are clean and lightly oiled to prevent sticking.
  • Place the marinated chicken thighs on the grill. Cook for 6-8 minutes on each side, or until the internal temperature reaches 165°F. Use a meat thermometer for accuracy.

Serving

  • Remove the chicken from the grill and let it rest for 5 minutes. Drizzle with the reserved chimichurri sauce before serving.
