Salad Ingredients

  • 4 ears of corn husked
  • 2 ripe avocados diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped

Dressing Ingredients

  • 3 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Preparation

  • Preheat the grill to medium-high heat. Place the husked corn directly on the grill grates and cook for about 10 minutes, turning occasionally, until the corn is charred on all sides.
  • Once the corn is grilled, set it aside to cool. Meanwhile, dice the avocados, halve the cherry tomatoes, and chop the red onion and cilantro.
  • In a small bowl, whisk together fresh lime juice, olive oil, salt, and pepper until emulsified.

Serving

  • In a large mixing bowl, combine the grilled corn kernels, diced avocados, cherry tomatoes, red onion, and cilantro. Pour the dressing over the salad and toss gently to combine.
  • Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Storage

  • Store any leftover salad in an airtight container in the refrigerator for up to 2 days. For best results, add the avocados just before serving to prevent them from browning.
